Description

This is an easy delicious recipe the whole family enjoys! Great for busy week nights or a quick recipe for the weekend.


Ingredients

Scale

2 packages Gnocchi

2 heads Broccoli

1 Red Onion

2 cups Cherry Tomatoes

1 bulb Garlic

Olive Oil

Salt

Pepper

Bacon


Instructions

Preheat oven to 400 degrees.

Chop one head of broccoli and one red onion into small pieces and set aside.

On a large sheet pan, cook bacon separately until desired crispiness.

Remove bacon from the sheet pan and dry access oil with a paper towel.

Keep the remaining bacon oil in the pan, add gnocchi, broccoli, onions, diced garlic, and whole cherry tomatoes. Move ingredients around to cover with the oil.

Add salt and pepper to taste.

Bake in the oven for 35 minutes or until desired vegetable crispiness.
