Summer Veggies Pasta

Description

This super easy recipe is perfect for using up extra veggies from the garden. It’s healthy, filling, and an easy summer favorite!


Ingredients

Penne Pasta

Zucchini

Squash

Broccoli

Yellow Onion

Roma Tomatoes

Crushed Red Pepper

Salt

Pepper

Parma Reggiano cheese (optional)


Instructions

Chop zucchini, squash, broccoli, onion, and tomato into small pieces and set aside.

Cook pasta per package instructions.

While pasta is cooking, in a large pan, add oil of choice, squash, zucchini, onion, and broccoli and sauté until tender.

Once pasta is cooked, drain in colander and return to pot.

Add sautéed veggies, tomatoes, crushed red pepper, salt, and pepper.

Top it off with shaved Parma Reggiano cheese if desired.
