Ingredients
8 oz pasta (we love rotini or mini shells for little hands)
1 cup black beans (canned, drained, and rinsed)
1 cup corn (fresh, canned, or frozen and thawed)
1 cup shredded Mexican cheese blend
2 tablespoons olive oil or butter
Salt and pepper to taste
Optional add-ins: diced cherry tomatoes, chopped bell peppers, avocado chunks, or a squeeze of lime for a unique fiesta pasta touch.
Instructions
Boil the pasta: Cook according to the package instructions until al dente. Drain and rinse with cool water to stop the cooking process.
Warm it up: In a large skillet or pot, heat olive oil or butter over medium heat. Add the garlic powder and cumin to bloom the spices—just 30 seconds will do.
Mix it all together: Add the black beans, corn, and cooked pasta to the skillet. Stir until everything is heated through, about 2–3 minutes. This step makes it a true kids fiesta dish.
