Ingredients

3 boneless, skinless chicken breasts (sliced in half)

3 tablespoons honey

Juice and zest of 3 limes

Red pepper flakes

1 tablespoon olive oil

1 cup cooked rice (basmati or sushi rice)

14oz corn (canned or frozen)

4 avocados, sliced

Fresh cilantro, chopped (optional, but highly recommended)

Salt and pepper, to taste


Instructions

Marinate the Chicken – Whisk together honey, lime juice, lime zest, red pepper flakes, olive oil, salt, and pepper. Coat the chicken and let it marinate for at least 20 minutes (the longer, the better).

Cook the Chicken – Heat a skillet or grill pan and cook the chicken until golden and juicy, about 6–7 minutes per side. Brush with extra honey-lime glaze as it cooks for maximum flavor.
