2 thick slices of rustic sourdough or country bread

1 tablespoon unsalted butter, softened

1 tablespoon mayonnaise (optional, for extra crispiness)

23 slices of ripe heirloom tomato

23 slices sharp cheddar or fontina cheese (or a blend for extra gooeyness)

Fresh basil leaves (optional, for a bright herbal note)

Pinch of flaky sea salt and freshly cracked black pepper


Instructions

Prep the bread: Spread butter (and a light swipe of mayo, if using) evenly over one side of each bread slice. This ensures a golden, crunchy crust.

Layer the fillings: Place cheese slices on the unbuttered side of one slice of bread. Add the heirloom tomato slices on top, sprinkle with salt and pepper, and tuck in a few basil leaves. Finish with another layer of cheese before capping with the second slice of bread, buttered side facing out.

Grill to perfection: Heat a skillet over medium-low. Place the sandwich in the pan and cook until the bread turns golden brown and the cheese begins to melt, about 3–4 minutes per side. Press gently with a spatula for even melting.
