This Healthy Chicken Gnocchi Soup recipe is a go to comfort food favorite. It’s healthy and delicious and a fun twist to your every day chicken noodle soup!
Ingredients
1/2 cup olive oil
1 jar of minced garlic
1 yellow onion
6 stalks of celery
6 carrots
2 packages of gnocchi
1 rotisserie chicken
6 cups of chicken stock
4 bay leaves
salt
pepper
Instructions
Chop yellow onion into small pieces and set aside.
Peel carrots, cut into small pieces, and set aside.
Chop celery into small pieces and set aside.
Remove chicken from the bones of the rotisserie chicken and set aside.
In a large Dutch oven on medium heat, add olive oil (or cooking oil of choice), garlic, yellow onion, and sauté until translucent.
Add chicken stock, celery, carrots, chicken, gnocchi, salt, pepper, and bay leaves.
Heat for 20 minutes on medium heat, stirring occasionally, until carrots are tender.
Enjoy alone or with your favorite rustic bread!
