Ingredients
filet mignon steaks (generally 1 per guest)
herbs de Provence
6 russet potatoes
3 heads of garlic
1 stick of butter
1 cup of milk
2 bags of Brussels sprouts
olive oil
salt
pepper
Instructions
Cut the bottoms the Brussels sprouts off, peel outer layer, cut into halves. Lightly coat the Brussel sprouts with olive oil, salt, and pepper, and set aside.
Peel potatoes, fill a large pot with cold water, set peeled potatoes in the water, and bring to a boil on the stove. Boil potatoes until soft.
Drain the water from the potatoes, add one cup of milk (or milk substitute) and one stick of butter to the softened potatoes and mash well with a wire potato masher.
Preheat oven to 375 degrees.
Cut the tops off of the garlic, remove any unnecessary outer layers, and place whole garlic clove into squares of aluminum foil (enough to cover garlic clove). Drizzle the clove lightly with olive oil and close up in foil. Repeat for three garlic cloves.
Place aluminum covered garlic cloves on a small sheet pan and roast in the oven for 45 minutes. Once garlic has roasted and inner cloves are soft, remove from oven and set aside, leaving in tinfoil to keep warm.
Place the sheet pan of Brussels sprouts in the oven (along with the garlic) and roast until desired crispiness. Remove from oven and set aside once cooked.
While garlic and Brussels are roasting, prep filets by placing them on a sheet pan, sprinkle with salt and pepper or Herbs de Provence as desired to season.
Place a large skillet pan on the stovetop and turn to a medium heat to warm. Add olive oil (or cooking oil of choice) and sear the filets on each side to desired cook temperature.
Once filets are seared, place on a sheet pan, and place in the oven on a low heat to keep warm.
Once the garlic is roasted, remove from the oven and aluminum foil. Remove the inner soft cloves, place on top of potatoes, and mash again to combine the garlic well into the potatoes.
Remove the steaks from the oven and serve with the garlic mashed potatoes and roasted Brussels Sprouts.
