Ingredients

For the Pork Chops:

4 bone-in pork chops (about 1 inch thick)

2 tbsp olive oil

1 tsp salt

1/2 tsp black pepper

1 tsp garlic powder

1 tsp smoked paprika

1 tsp dried thyme

1 tbsp butter

For the Applesauce:

3 large apples (Granny Smith or Honeycrisp), peeled and chopped

1/4 cup water

2 tbsp brown sugar

1/2 tsp cinnamon

1/2 tsp lemon juice

For the Mashed Potatoes:

4 large russet potatoes, peeled and cubed

4 tbsp butter

1/2 cup sour cream

Salt and pepper to taste

For the Green Beans:

1 lb fresh green beans, trimmed

1 tbsp olive oil

2 cloves garlic, minced

Salt and pepper to taste


Instructions

1. Prepare the Applesauce

Start by making the applesauce since it needs time to simmer. In a medium saucepan over medium heat, combine the chopped apples, water, brown sugar, cinnamon, and lemon juice. Stir everything together, cover, and let it cook for about 15-20 minutes, stirring occasionally. Once the apples are soft, mash them with a fork or blend for a smoother texture. Set aside.

2. Cook the Mashed Potatoes

Place the peeled and cubed potatoes in a large pot of salted water. Bring to a boil and cook until the potatoes are fork-tender, about 15 minutes. Drain the water and return the potatoes to the pot. Add butter, sour cream, salt, and pepper, then mash until smooth and creamy. Cover to keep warm.

3. Sauté the Green Beans

Heat olive oil in a skillet over medium heat. Add minced garlic and cook for about 30 seconds until fragrant. Toss in the green beans and sauté for 5-7 minutes until they are tender yet still crisp. Season with salt and pepper to taste. Remove from heat and set aside.

4. Cook the Pork Chops

Pat the pork chops dry with a paper towel, then season both sides with salt, pepper, garlic powder, smoked paprika, and thyme. Heat olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 3-4 minutes per side until golden brown. Reduce heat to medium, add a tablespoon of butter, and baste the chops with the melted butter for another 2-3 minutes. The internal temperature should reach 145°F. Remove from heat and let them rest for a few minutes before serving.
