4 cups fresh arugula
2 boxes of cooked couscous
3 boneless, skinless chicken breasts
8 mandarin oranges, peeled and segmented
1/2 cup sunflower seeds
Salt, pepper, & paprika to taste
Dressing Ingredients
2 cups plain Greek yogurt (homemade or store-bought)
2 tablespoons fresh lemon juice
2 tablespoons white balsamic vinegar
1 bunch of fresh basil
1 avocado
2 tablespoons minced garlic
2 tablespoons of honey
salt and pepper to taste

Fire up your grill or heat a grill pan over medium-high heat. Season the chicken breasts with salt, pepper, and a drizzle of olive oil. Grill for about 5-6 minutes per side until the internal temperature reaches 165°F (75°C). Let the chicken rest for a few minutes before slicing it into strips.
While the chicken cooks, prepare the couscous according to the package instructions. Fluff it with a fork once cooked and let it cool slightly.
Plate your arugula and top with couscous, chicken strips, Mandarin oranges, and sunflower seeds. Finally, drizzle your dish with our zesty Lemon Basil Greek Yogurt Dressing. If you have leftovers, store them in an airtight container in the refrigerator for up to two days.
