4 cups fresh arugula

2 boxes of cooked couscous

3 boneless, skinless chicken breasts

8 mandarin oranges, peeled and segmented

1/2 cup sunflower seeds

Salt, pepper, & paprika to taste

 

Dressing Ingredients

2 cups plain Greek yogurt (homemade or store-bought)

2 tablespoons fresh lemon juice

2 tablespoons white balsamic vinegar

1 bunch of fresh basil

1 avocado

2 tablespoons minced garlic

2 tablespoons of honey

salt and pepper to taste


Instructions

Step 1: Make the Dressing

Step 2: Prepare the Chicken

Fire up your grill or heat a grill pan over medium-high heat. Season the chicken breasts with salt, pepper, and a drizzle of olive oil. Grill for about 5-6 minutes per side until the internal temperature reaches 165°F (75°C). Let the chicken rest for a few minutes before slicing it into strips.

Step 3: Cook the Couscous

While the chicken cooks, prepare the couscous according to the package instructions. Fluff it with a fork once cooked and let it cool slightly.
