Healthy Oatmeal Chocolate Chip Muffins

Ingredients

Scale

1 cup rolled oats

1 cup of milk (or plant milk of choice)

1 egg

1 cup oat flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon apple cider vinegar

1/4 teaspoon salt

2 tablespoons of apple sauce

1 cup of sugar (or coconut sugar)

1 teaspoon of vanilla extract

Dark semi-sweet chocolate chips


Instructions

Preheat & Prep – Set your oven to 350°F (175°C) and line a muffin tin with liners.

Mix the Ingredients – In a large bowl, whisk together the oats and milk and let sit for about 10 minutes. Then add the remaining ingredients (except the chocolate chips) and mix well together.

Fill & Sprinkle – Divide the batter evenly among the muffin cups, filling each about ¾ full. Sprinkle the chocolate chips on top of each muffin.

Bake – Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.

Cool & Enjoy – Let the muffins rest in the tin for 5 minutes before transferring them to a wire rack to cool completely. Note: The wrappers are easier to remove the next day (if you can wait that long!).
