Flank Steak & Chimichurri Sauce

Description

This Flank Steak with Chimichurri Sauce recipe is a favorite in our house! Grilled flank steak is accompanied with mashed potatoes, green beans and topped with our favorite Argentinian Chimichurri Sauce loaded with healthy herbs and flavor!


Ingredients

Scale

2 lbs. flank steak

8 medium sized yellow potatoes

1 package of fresh or frozen green beans

1 stick of butter

Olive oil

Salt

Pepper

Argentinian Chimichurri Sauce (see our recipe)


Instructions

Make Chimichurri recipe and refrigerate.

Place potatoes in a large pot and boil (with skin on) until soft.

Once soft, strain water and keep potatoes in pot with skin on.

Add 1 stick of butter and one cup of milk to potatoes.

Mash or whip potatoes to desire consistency adding salt and pepper to taste.

Cover to keep warm.

Boil green beans in a stove top pot until al dente.

Strain water from beans and cover to keep warm.

Drizzle steak with olive oil and add salt and pepper to taste.

Grill steak to desired temperature (medium rare recommended).

Once steak is cooked, slice into thin pieces and to plate with mashed potatoes and green beans.

Generously drizzle meat with Chimichurri sauce.
