Easy Weeknight Nachos

Description

Nachos are an easy weeknight dinner customizable to everyone’s tastes. Top with ground meat or make it vegetarian with beans or just cheese. Add tomatoes, onions, guacamole, or sour cream – the sky is the limit! 


Ingredients

Scale

1 large bag of corn tortilla chips

1 pound of ground turkey or lean ground beef

1 pack of chili seasoning (mild or hot to taste)

2 cans of black beans

2 cans of corn

3 medium size Roma tomatoes

shredded cheese

guacamole (optional)

sour cream (optional)

green onion, chopped (optional)


Instructions

Chop Roma tomatoes into small pieces and set aside.

In a large stovetop pan, add cooking oil of choice, and brown the ground turkey or beef until thoroughly cooked mixing well with seasoning mix.

In separate stove top pans, heat black beans and corn until hot.

Preheat oven to 350 degrees.

On a large sheet pan lined with parchment paper, spread corn chips evenly across the pan.

Sprinkle the shredded cheese across the chips until evenly covered.

Place the cheese covered nachos in the oven. Once the cheese has melted, remove from the oven and set aside.

Serve nachos on a plate topping with ground meat, black beans, corn, and tomatoes. Add guacamole, sour cream, and green onions as desires or spice it up with your favorite hot sauce.
